

The Divorce Papers cocktail is a modern classic with a great story and even better balance.
Bright, fresh and aromatic, it combines gin, citrus, honey and passionfruit with just enough bitterness from Amaro to keep things interesting.
Where does Divorce Papers cocktail get its name?
Originally created by bartender Leonardo Bernardes at Ba Bar in Seattle, the name is a tongue-in-cheek reference to the famously brief and marriage of Marilyn Monroe and Joe DiMaggio. Monroe filed for divorce only nine months after their wedding.
How to make a Divorce Papers cocktail
You'll need:
• 50ml Madame Jennifer Biologist Gin
• 15ml Madame Jennifer Amaro
• 15ml fresh lime juice
• 15ml honey syrup
• 15ml passionfruit purée
Instructions
Add all the ingredients in a cocktail shaker filled with ice
Shake vigorously.
Strain into a chilled coupe.

How to make honey syrup
Combine equal parts honey and warm water. Gently heat over a low heat, stirring until the honey and water are fully mixed (don’t boil). Allow to cool, then store in an airtight jar or bottle in the fridge. Keeps well for up to one month.
This cocktail works beautifully as an aperitif and is a great showcase for botanical-forward gins like Biologist Gin.
