How to make a classic Sazerac cocktail with absinthe

The Sazerac is one of the oldest cocktails in the world and a true New Orleans classic.
Made with rye whiskey, Peychaud's Bitters and just a few drops of Absinthe, it's a bold, spirit-forward cocktail that's simple to make at home. While the Absinthe only plays a small role, it's what gives the Sazerac its unmistakable aroma and depth.
Our Madame Jennifer Absinthe is distilled in small batches in Hove and is perfect for classic cocktails like this one.

What you'll need to make a Sazerac cocktail
50ml rye whiskey
A few drops of Madame Jennifer Absinthe
10ml sugar syrup (1:1)
1 dash Peychaud's Bitters
Fresh lemon zest
Instructions:
Chill an Old Fashioned glass.
Add a few drops of Madame Jennifer Absinthe and swirl it around the inside of the glass to coat it. Pour away any excess.
Fill a mixing glass with ice and add the rye whiskey, sugar syrup and Peychaud's Bitters.
Stir until well chilled.
Strain into the prepared glass.
Twist a strip of fresh lemon zest over the drink to release the oils, then either drop it into the glass or discard it.
What does Absinthe do in a Sazerac?
Although only a few drops are used, Absinthe is one of the defining ingredients in a Sazerac. Rinsing the glass with Absinthe adds delicate herbal and aniseed notes that lift the whiskey and bitters without overpowering them.
It's a small step that makes a big difference.

What is a Sazerac?

Do I need Absinthe for a Sazerac?
Yes. The Absinthe rinse is an essential part of the cocktail and gives a Sazerac its distinctive aroma and flavour.
Can I use bourbon instead of rye whiskey?
You can, although rye whiskey gives the cocktail its traditional spicy character. Bourbon will produce a slightly sweeter Sazerac.
Why is the glass rinsed with Absinthe?
Rather than mixing it into the drink, coating the inside of the glass gives just enough Absinthe flavour without overwhelming the whiskey.
