Get ready to impress your friends with delicious Rhubarb Collins, garnished with candied rhubarb - the perfect combo of sweet and tart.
We recommend using Madame Jennifer's Triple Orange gin for that extra sweetness.
Rhubarb Collins recipe
Ingredients you'll need
50ml Madame Jennifer Triple Orange gin
40ml Rhubarb Syrup
40ml lemon juice
50ml soda water
For rhubarb syrup & candied garnish you will need:
200 g sugar
200ml water
5 stalks of rhubarb
Here's how to make it
1. Combine sugar and water in a small pan. Warm over medium heat until the sugar has completely dissolved. Set aside to cool a little. Preheat oven to 100℃.
2. Wash and trim the rhubarb, then peel into long, even strips with a vegetable peeler. Submerge the rhubarb strips into sugar syrup and soak for 5-10 minutes.
3. Strain the syrup from the rhubarb strips and bottle in a clean jar.
4. Line a baking tray with paper and arrange the rhubarb strips in a single layer, not touching. Smooth them so they lie flat.
5. Bake for approximately one hour until the strips are dried out and fairly crisp – they should be dry and not tacky to the touch.
6. Mix the gin, rhubarb Syrup and lemon juice in a highball glass with ice. Top up with soda water and garnish with a strip of candied rhubarb.
